Umami, A New Flavor Against Obesity
Australian researchers have discovered a new flavor, the sixth, which could play an important role in the fight against obesity. Their studies indicate that perhaps the decreased sensitivity to this taste may be related to higher consumption of fats.
So far they had identified five flavors: sweet, salty, bitter, sour and bitter. However, a study by researchers from the Universities of Deakin, Melbourne and Adelaide, both in Australia and published in the British Journal of Nutrition “, has found a sixth, it has termed” umami. ” And there is something that relates to obesity umami, and it is the taste of fat. That is, known as the lemon tart and sweet sugar, fat known umami.
The researchers, coordinated by Russell Keast, found that the sensitivity to this taste is not the same in all people. And also found that those who showed more sensitivity tended to eat less fat and were thinner. And conversely, those with less sensitivity to umami drank more had more fat and overweight.
Keast suggests that, due to the high intake of fat, the taste system of some people may become insensitive to umami, which would make them taking more of these and thereby increase their BMI (Body Mass Index). However, it is an issue they are investigating, they believe that through the study of the new flavor, could help many people to eat less fat and reduce obesity. The way in which this could be achieved perhaps through the development of new low-fat foods.
